Cheeseburger Muffins

This kid friendly recipe is a fun way to encourage your kids to expand beyond chicken fingers and buttered noodles, while hiding some healthy veggies! Make it adult friendly too by offering a build-your-own buffet of toppings.

- ½ lb ground beef or turkey
- 1 cup baby spinach, sliced in ribbons
- ½ cup zucchini or bell peppers, finely diced
- ½ tsp onion powder
- ½ tsp garlic powder
- salt and pepper to taste
- ½ cup BBQ sauce (I use Sweet Baby Rays Hickory and Brown Sugar)
- 1 tube refridgerated biscuits (12 oz tube- makes 10 biscuits)
- ½ cup Velveeta cheese, cubed
Adult Add-ins
- cooked bacon, diced
- onions
- diced pickles or relish
- green onions or chives
- tomatoes, diced
- ketchup, mustard, BBQ sauce, ranch or any other sauce your like on your burger
Preheat oven to 400 degrees.
Cook ground beef or turkey with either zucchini or bell peppers in a large pan over medium high heat until almost done. Season with salt, pepper, garlic powder, and onion powder. Add spinach and BBQ sauce and cook 2-3 minutes more until spinach is wilted.
Grease a 12 muffin tin. Press each uncooked biscuit into 10 of the muffin cups. Spread the dough evenly along the bottom of each cup and up the sides.
Generously fill each cup with the beef (or turkey) mixture. Top with 5-6 Velveeta cubes.
Bake for 14-15 minutes until biscuit dough is golden brown and cheese is melted.
Optional: top with additional shredded cheese and melt for 1-2 minutes before.
Bring out of oven and allow to set in the muffin tin for 5 minutes. Garnish with toppings and sauce of choice.
Serve 1-2 muffins per person.
